Egyptian spinach is not related to spinach at all, it is actually related to okra in the mallow family. The leaves are very mild, a bit slimy (not at all like Malabar spinach, an unrelated plant that we think is beautiful, but gross).

Mild, edible leaves that are super nutritious. 

Young pods (when bendable) can be eat fresh, cooked, or pickled and have a nice flavor and texture. 

Stalks are used for cordage and fiber -- jute and burlap come from this plant. 

Great in green smoothies as well as cooked green dishes such as Indian saag, as well as the dish molokhia from Egypt. In smoothies, I like to combine it with tulsi basil (Kapoor variety). 

I have discovered they can be a nice trap plant for Japanese beetles as well, and can usually survive through their season. 

This plant thrives in HOT weather and can grow to around 6 feet high if not topped regularly when harvesting. Great summer green!
