Hardy to Zone 8, likely 7, and possibly even 5 and 6 with some easy protection

This plant is widely used in the cuisine of Mexico and Central America and is a versatile herb that is both strong and subtle, admired by many top chefs. As a landscape plant it's incredible. Great permaculture food forest understory plant.
It can grow up to 6 or 7 feet tall, possibly taller in mild winter climates. It's only supposed to be hardy to Zone 9, but I have grown in unprotected in Zone 7 and have it come back every year just fine. I mulch my main patch every year here in Zone 7a, and leave other patches "to die" during the coldest stretches of winter temps. So far, none have perished, including the unprotected ones. They are very frost sensitive so will die to the ground in the fall during the first frost. However, they return in spring with a vigor, and the patch grows each year.
The flavor is like root beer, anise, and black pepper. The texture is great. Good for tacos, burgers, pizza, chicken salad, as well as the traditional recipes or more ambitious chefs. It's a great ice cream flavor as well! The leaves are quite large and can be used for wraps.
